HAILEY GREEN, WEST COAST, NZ

A bit of a legend in these parts, Hailey Green is one of the main reasons that Broken River ski club consistently opens before any other field. A patroller there for many years, Hailey has been known to sleep in the top hut and keep the tows running all night so that they won't freeze.

Hailey is also known for his west coast hospitality and his whitebait fritters.

Hailey's Whitebait Fritters

1 pound fresh West Coast whitebait

1 egg

Mix egg yolk with whitebait. Beat egg white until standing and fold in with whitebait mix. Spoon into super-hot pan with grape seed oil and browned, chopped garlic. Cook one minute each side or 'till brown. Share.
